ANZAC bikkies
Mal has asked me for the recipe we used for our ANZAC bikkies yesterday. I have been very disappointed by ANZACs in the past when they are too dry and crumbly or crunchy rather than chewy. Not being and Australian of New Zealander, Nigella does not have an ANZAC recipe so I turned to the very first cookbook I owned and I believe Granny gave it to me, The Australian Women's Weekly Basic Cookbook.
1 cup rolled oats
1 cup plain flour
1 cup brown sugar
1/2 cup coconut
125g butter
2 tbsp golden syrup
1 tbsp water
1/2 tsp bicarbonate of soda
1. Combine oats, sifted flour, sugar and coconut in a large bowl. Combine butter, golden syrup and water in a small saucepan, stir constantly over medium heat until butter is melted; stir in soda (or do it in the microwave). Stir mixture into dry ingredients.
2. Place rounded teaspoons of mixture 5cm apart onto lightly greases oven trays; bake in moderately slow oven for about 20 minutes. Use spatula to loosen biscuits on trays, cool on trays.
Makes about 25.
I used slightly more for each wet ingredient, just a few grams, and only cooked them for 15 minutes. I also put them on baking paper so didn't need to loosen with a spatula or wash up the trays!
We didn't get up until after 9 this morning and now Andrew has taken the kids to the Junee Pool. This afternoon Joss and I are off to Chrissie's to learn to knit! I wonder what projects we'll start with - not scarves.
